Hey Mike,
Jabber can refer to the XMPP protocol, which doesn't do a whole lot in and of itself. You'll need to connect to a specific XMPP server to take advantage of that service. A quick web search pulls up some good information about Jabber/XMPP that might be helpful: https://discussions.apple.com/docs/DOC-8012, as well as a guide on how to connect to a service like Gmail/Gchat through your iChat client: http://www.upperregister.com/~charlie/ichat-gmail.html
That said, there are no Sonic specific settings required to set up Jabber/XMPP through your iChat client.
