Does anyone know how to change the DNS server settings in the Arris BGW210-700 modem/router?

These settings appear to be hidden but surely there is a way to expose and change them.

There are better DNS servers out there than the AT&T ones I appear to be getting by default.

I suspect it's in the home network/configure somewhere.

Otherwise you can tell each computer to not use the gateway for dns but a specified DNS server.
