How Do You Change my.cnf for MySQL?

We identified some MySQL database issues that are resulting in visible character encoding problems on our website. In order to resolve them, we needed to make a change to the my.cnf file, and dump and reload several of MySQL tables.

We were able to obtain SSH access in order to dump and reload the tables that were encoded incorrectly. Thanks for your help on that.

Now, we need to change my.cnf so that the [client] section contains the following:

default-character-set = utf8

This configuration change should be in lieu of any other default-character-set directive in the [client] section.

How do we do that?
