Does having more than one slow down the connection? Or are they super in sync? I live in a 2-story place.

Using multiple Eero devices shouldn't impact performance. They are designed to be utilized with multiple units since they are a Mesh network.
One Eero Max 7 covers roughly 2,500sqft, so since your house is a two-story, I think two Eeros would be enough to cover the whole house. At least, it would be a solid starting point and you could add another if necessary.
