Once it's ported, will my Fusion service get disconnected automatically?

Unlike AT&T, who will cancel your phone (and DSL) when you port your number out, Sonic will assign a new phone number to your existing Fusion service and it will continue to work as before, except with a new phone number.

If you really want to cancel your Fusion Voice/DSL service, you'll need to call support to do so.

That would depend upon the winning carrier. Losing carriers release numbers for porting within one day.
