We're in the process of building a backyard ADU, and want to get internet access hard-wired back there from our main house (existing wifi won't reach it). Does anyone know whether that would it be cat 5E or cat 6 cable?

Depends on the distance between termination points... Max distance for copper is 328' so if its close to or exceeds that then go with fiber. Either way make sure to use conduit which makes running cable (and replacing it) a lot easier while keeping it protected. Did this a couple years ago on my family's property (~180' run) burying 3/4" pvc conduit and cat 6a cable. Quick and easy 8-)

You currently have 10 GB fiber service so I would recommend using Cat 6 or Cat 6a ethernet cable. While you do have to worry about long runs with copper cable, fiber optic cables have essentially no attenuation for up to about 60 miles so luckily the distance won't be an issue.
