Unplug Comcast from router and plug Sonic instead
Correct, assuming the Sonic technician checked the line and confirmed the bandwidth.

Plug in Roku and install
Assuming you formerly used Comcast TV and now wish to stream, that is correct. You probably also want to get a streaming service that does local channels, like YouTube TV, Hulu, Sling, Fubo, etc. Here are a couple of articles that provide reviews:

(Consider a web search on "reviews of tv streaming services with local channels").
Also, depending on your location, you may be able to receive the local channels with an HDTV antenna and use a streaming service without local channels (web search on "reviews of tv streaming services without local channels"

For e-mail, everything should stay the same, right? I can still use my current e-mail addresses?
It depends on the email addresses. If you're using a service like Gmail, Yahoo, Hotmail, and so forth, then yes. If you're using Comcast email, most likely, but discuss it with the Comcast representative when you cancel service. You will need to do that, or Comcast will continue to bill you.
