I currently have my entire house wired for cat6, and using a Netgear unmanaged 48 port POE switch.
I would like to be able to plug a VOIP phone into any wired outlet in my house and utilize my sonic phone number/voice service.

Is this possible?

I currently have a Polycom VVX310 phone.

Never played with voip before but learn fast.

It's not doable, as the Sonic Fiber ONT gives you a dialtone so that you can use a regular telephone. While the ONT does use SIP to connect to Sonic's phone servers, it's not something that customers have access to for their own use.

At the moment, you cannot connect your phones DIRECTLY to sonic phone server.
The only supported workflow is through the RG11 on the ONT or the sonic app on your mobile device.

You could have your own voip server (e.g. asterisk) and connect your phone to it on one side and sonic as an analog phone line on the other.
If you go that route, tell us of it went.
