Need for interior telephone (cat3) wiring? Sonic VOIP without wires to the ONT?

I'm designing a new ADU. Is there an alternative to running "phone line" to each room, if I already have a cat5e cable to each room?

With a sonic ONT there's a conventional analog phone jack.
Is there a box I can hook up to get Sonic VOIP, but just at a remote location to the ONT?

The simplest is to use a cordless phone with multiple handsets. We use the uniden ones with 2 line. Line one is sonic, line 2 is a linksys ATA to future nine voip provider for calls to cell phones in Europe.

You can down only keep the two center pairs on your cat 5 for 100BaseT and use the other pairs for phone.

You can run a voip server and put corded voip phones. Sonic voip works on their adapters and on the app but they do not document how to use it with alternate hardware so you may have to have your asterisk server have POTS line input connected to the sonic ONT.
