Would an Eero router be recommended with the upcoming Gigabit Fiber service? If not, what router(s) would best take advantage of the higher speeds?

The sonic supplied router is probably best for most people. You're right--the Pace is not sufficient for those who want a little more control or their topology is a little more complex.
